If you love sweet potatoes and haven’t tried Murasaki sweet potatoes definitely give these a shot. What is everyone’s favorite recipe or way to cook these Murasaki sweet potatoes? I’m curious how everyone would compare the taste and cooking texture of these to regular Trader Joe’s sweet potatoes. Description Sweet Potato ‘Murasaki’ bears reddish-purple skin but unlike the typical orange sweet potatoes it has white flesh. Some varieties have white skin but once cut open. It is also resistant to soil rot and fusarium root rot. This sweet potato variety is highly resistant to southern root-knot nematode. For best texture and flavor, soils should be kept evenly moist. They crisp up really quickly and are great at adding a starchy, filling side to any meal. Murasaki imo (lit., purple potato) are dense, with a creamy texture whilst also retaining a subtle sweetness. Sweet Potato Murasaki is cold hardy and easy to grow, growing best in sunny locations with well-draining soil. These Trader Joe’s Japanese sweet potatoes come out great when you toss them in some olive oil and sea salt and bake them at a fairly high temperature in the oven. Murasaki sweet potatoes are medium to large in size and are elongated, somewhat bulbous, and oblong in shape with each end tapering to a point or rounded. While some sweet potatoes are dense, starchy, and creamy, others are more watery when cooked, with a stringier texture.
